Instructor's Out-of-Provence Noodles Introduction
In Douliu, although there are no military dependents' villages, you can find a big sign for "Instructor's Provincial Noodles" in a quiet alley. The owner is a retired Air Force veteran from Taipei, and the excellent cooking skills are indeed passed down from provincial instructors. The plain noodles here have a deep color that resembles braised beef noodles, with a rich meat sauce aroma, making the flavor quite unique.
