Xinwen Frozen Tofu Pudding Introduction
The temple courtyard is often a gathering place for vendors, and the Xinyuan Jiaying Temple entrance is no exception. However, the stall is not located directly in front of the temple but underneath the grand archway at the entrance. "Xinyuan Frozen Tofu Pudding" is one of them. The owner, Wang Wenzhen, learned to make tofu pudding from his brother-in-law, who opened a tofu pudding shop in Kaohsiung in 1995. After learning the craft in Kaohsiung in 2004, Wang returned to set up a stall under the archway of the Xinyuan Jiaying Temple to sell tofu pudding. In addition to traditional plain tofu pudding, there are also flavors like sweet potato, mung bean, red bean, and barley. Xinyuan Frozen Tofu Pudding emphasizes health, with the tofu pudding handmade early that morning without preservatives. The soybeans are imported from Canada and are non-GMO, with import certification. The red beans, mung beans, and barley are all boiled fresh that day, sourced from Taiwan, and come with pesticide inspection certificates. The syrup is made from Taiwanese Sugar's granulated sugar, boiled for a long time. Wang Wenzhen's frozen tofu pudding doesn't require crushed ice; it's refreshingly cool on its own because the stall itself operates as a large refrigerator, a result of Wang's years of experience in selling tofu pudding. In addition to tofu pudding, "Xinyuan Frozen Tofu Pudding" also sells mung bean soup, barley soup, and black tea. The tofu pudding uses Taiwanese Sugar's second granulated sugar, while mung bean and barley soups use their special granulated sugar. The tea leaves for the black tea are sourced from contracted tea farmers, ensuring quality despite slightly higher costs.
