Xinzhuang Frozen Tofu Pudding Introduction
The temple entrance is often a gathering place for vendors, and the entrance to the Xinyuan Jiaying Temple is no exception. However, instead of being set up right in front of the temple, the stall "Xinyuan Frozen Tofu Pudding" is located under the large archway at the entrance. The owner, Wang Wenzhen, learned to make tofu pudding from his brother, who opened a tofu pudding shop in Kaohsiung in 1995. After training under his brother in 2004, Wang Wenzhen returned to set up his stall under the archway in Xinyuan Jiaying Temple, offering not only traditional plain tofu pudding but also flavors like sweet potato, mung bean, red bean, and barley. Xinyuan Frozen Tofu Pudding emphasizes health benefits, with the tofu pudding handmade every morning without preservatives. The soybeans are imported from Canada and are non-GMO, with import certificates; the red beans, mung beans, and barley are all boiled on the same day and produced in Taiwan, all accompanied by pesticide inspection certificates. The sweet syrup is made by simmering Taiwan Sugar's granulated sugar for an extended time. Wang Wenzhen’s frozen tofu pudding doesn’t require crushed ice, yet it is still cool and refreshing because the tofu pudding stall itself acts as a large refrigerator, a result of his many years of experience selling tofu pudding. In addition to tofu pudding, "Xinyuan Frozen Tofu Pudding" also sells mung bean soup, barley soup, and black tea. The tofu pudding uses Taiwan Sugar’s second-grade sugar, while the mung bean and barley soups use Taiwan Sugar’s special sugar. The tea leaves for the black tea are sourced from farmers under a contract, ensuring slightly higher costs but guaranteed quality.
