Xinwen Frozen Tofu Pudding Introduction
The temple square is often a gathering place for vendors, and the same goes for the Xinyuan Jiaying Temple area, though the stall is not located right in front of the temple but under the large entrance gate. One of these stalls is "Xinyuan Frozen Douhua". The owner, Wang Wenzhen, learned how to make douhua from his brother, who opened a douhua shop in Kaohsiung in 1995. After learning the craft in 2004, Wang returned to set up his stall under the entrance of the Xinyuan Jiaying Temple. In addition to traditional plain douhua, he also offers various flavors including sweet potato, mung bean, red bean, and job's tears. Xinyuan Frozen Douhua emphasizes health, with the douhua handmade in the early morning and free from preservatives. The soybeans are imported from Canada and are non-GMO, with an import certificate. The red beans, mung beans, and job's tears are all simmered fresh each day, sourced from Taiwan, and accompanied by pesticide inspection certificates. The syrup is made by simmering Taiwan Sugar's granulated sugar for an extended period. Wang Wenzhen's frozen douhua does not require crushed ice; it is pleasantly cool, as the stall itself acts as a large refrigerator, showcasing Wang's years of experience in selling douhua. Besides selling douhua, "Xinyuan Frozen Douhua" also offers mung bean soup, job's tears soup, and black tea. The douhua uses Taiwan Sugar's second-grade sugar, while the mung bean and job's tears soups are made with special grade sugar. The black tea leaves are sourced from a contracted tea farmer, ensuring higher costs but guaranteed quality.
