The temple square is often a gathering place for vendors, and the Xinyuan Jiaying Temple square is no exception. However, the stall for "Xinyuan Frozen Tofu Pudding" is situated not directly in front of the temple, but under the grand archway at the entrance. The owner, Wang Wenzhen, learned tofu pudding making from his brother who opened a tofu shop in Kaohsiung in 1995. After learning the craft in Kaohsiung in 2004, Wang returned to set up a stall under the grand archway to sell his products. In addition to traditional plain tofu pudding, he offers flavors such as sweet potato, mung bean, red bean, and job's tears. Xinyuan Frozen Tofu Pudding emphasizes health, with tofu pudding handmade every morning without preservatives. The soybeans are imported from Canada and are non-GMO, with import certification. The red beans, mung beans, and job's tears are all cooked fresh daily and produced in Taiwan, with pesticide inspection certificates. The syrup is made by simmering Tai Sugar granulated sugar for an extended period. Wang Wenzhen's frozen tofu pudding is refreshingly cool even without crushed ice, as the stall itself acts as a large refrigerator—an outcome of his many years of selling tofu pudding. In addition to tofu pudding, Xinyuan Frozen Tofu Pudding also sells mung bean soup, job's tears soup, and black tea. The tofu pudding uses Tai Sugar No. 2 granulated sugar, while the mung bean and job's tears soups use Tai Sugar special granulated sugar. The tea leaves for the black tea are sourced under contract with tea farmers, ensuring higher cost but guaranteed quality.
