Hong Fengfu (born in 1957) and his wife, Hong Zhuxiulian, started their early business selling oyster omelettes, stir-fried seafood, and fried noodles at the vendor area of Nankunshen Daitian Temple, where they enjoyed great success and were often extremely busy. However, in 2006, the vendor area was reorganized, allowing only 20 out of over 100 vendors to continue operating, and those who did not win the lottery had to leave. Because they did not win, the couple relocated back to their home in Keelung to continue their business. The oyster omelette at Aman Stir-Fried Restaurant is made from sweet potato flour. Its ingredients include: oysters, eggs, and vegetables. The oysters used are stone oysters, known for their firm texture and higher price; the vegetables include sweet potato leaves, bean sprouts, and cabbage, while in winter, it is often Chinese chrysanthemum. The vegetables are added according to customer preferences; for example, if someone does not like bean sprouts, they can be omitted. The sweet potato leaves are grown by the couple themselves, ensuring they are pesticide-free. The preparation of the oyster omelette involves heating oil in a flat pan, then adding oysters, cracking eggs, adding vegetables, and pouring in the batter. Once the batter is cooked, it is flipped and fried on the other side before being plated and topped with a unique tomato sauce. This sauce is made by combining tomato sauce with a secret recipe and sweet potato flour as a thickener. In addition to oyster omelettes, Aman Stir-Fried Restaurant also serves seafood congee, seafood noodles, and milkfish congee. The price of the oyster omelette varies, adjusting with the fluctuations in raw material costs.
