Hong Fengfu (born in 1957) and his wife Hong Zhuxiulan started their early business selling oyster omelets, stir-fried seafood, and fried noodles at the vendor area of Nankunshen Daitian Temple in good business conditions. They were often busy, but in 2006, Nankunshen Daitian Temple reorganized the vendor area, allowing only 20 out of more than 100 vendors to continue operating, leaving the rest to vacate. Since they did not draw a lot, the couple moved back to their house in Oslin to continue their business. The oyster omelet at A-Man Stir-Fry Shop uses sweet potato flour for the batter. The ingredients include: oysters, eggs, and vegetables. The oysters are rock oysters, which are firm in texture and relatively expensive; the vegetables include: sweet potato leaves, bean sprouts, and cabbage, with water spinach available in winter. The vegetables are added according to customer preferences; for customers who do not like bean sprouts, they can be omitted, while the sweet potato leaves are grown on their own farm and guaranteed to be pesticide-free. The method of making the oyster omelet is as follows: after heating oil in a flat pan, the oysters are added first, followed by the eggs, then the vegetables, and finally the batter.
