Oyster Bay Ah Man's Stir-fried Restaurant Oyster Omelette Introduction
Hong Fengfu (born in 1957) and his wife Hong Zhuxiu began their early years selling oyster omelets, stir-fried seafood, and fried noodles at the stall area of Nankunshen Daitian Temple's Wanshan Hall, where business was thriving and they were often busy. However, in 2006, the stall area at Nankunshen Daitian Temple was reorganized, allowing only 20 out of over 100 stalls to continue operating. Those who did not secure a spot had to close down, which led Hong Fengfu and his wife to relocate back to their home in Keelung to continue their business. The oyster omelet at A-Man Stir-Fried Restaurant is made with sweet potato flour. Its ingredients include oysters, eggs, and vegetables. The oysters used are rock oysters, which are firm and slightly more expensive; the vegetables include sweet potato leaves, bean sprouts, and bok choy, with crown daisy used in winter. The choice of vegetables depends on the customer's preference; for example, if someone does not like bean sprouts, they can be omitted. The sweet potato leaves are grown on their own farm, ensuring they are pesticide-free. The preparation of the oyster omelet involves heating oil in a flat pan, then sequentially adding oysters, cracking in eggs, adding the vegetables, and pouring in the batter. Once the batter is cooked, it is flipped and fried on the other side before being plated and served with a special tomato sauce. This sauce is unique, made from regular tomato sauce with a secret recipe, thickened with sweet potato flour. In addition to oyster omelets, A-Man Stir-Fried Restaurant also offers seafood porridge, seafood noodles, and milkfish porridge. The price of the oyster omelet is not fixed; it fluctuates based on the cost of raw materials.
