Hong Fengfu (born in 1957) and his wife Hong Zhuxiu established a food stall in the vendor area of Nankunshen Daitian Temple, selling oyster omelets, stir-fried seafood, stir-fried noodles, and other dishes. Their business flourished, and they were often extremely busy. However, in 2006, Nankunshen Daitian Temple reorganized the vendor area, allowing only 20 out of over 100 stalls to continue operating. Those who were not selected had to move. As they did not draw a winning lot, the couple relocated back to their home in Keelung to continue their business. At A Man Stir-fried Restaurant, the batter for the oyster omelet is made from sweet potato starch. The ingredients include oysters, eggs, and vegetables. The oysters used are Stone oysters, known for their firm meat, which commands a higher price. The vegetables vary and may include sweet potato leaves, bean sprouts, or cabbage, with crown daisy being used in winter. The vegetables are adjusted based on customer preferences; for instance, some customers don’t want bean sprouts, so they are omitted. The sweet potato leaves are homegrown and pesticide-free. The cooking method for the oyster omelet involves heating oil in a frying pan, adding oysters first, then cracking in an egg, adding vegetables, and pouring in the batter. Once the batter is cooked, it is flipped and cooked on the other side, then plated and drizzled with a special tomato sauce before serving. This tomato sauce is distinctive, made from tomato sauce combined with a secret recipe and thickened with sweet potato starch. In addition to oyster omelets, A Man Stir-fried Restaurant also serves seafood porridge, seafood noodles, and milkfish porridge.
