They select young goats weighing 15 to 16 kilograms, resulting in tender lamb that is free from gamey flavor. The popular dishes mainly include stir-fried lamb and lamb soup. The stir-fried lamb is quickly cooked with shacha sauce, garlic, and lettuce, offering a strong aroma.
