Kaiseki cuisine is arguably one of the most commonly consumed and accepted foreign cuisines among Taiwanese. However, the Japanese cuisine familiar to Taiwanese people seems to have undergone little variation. It is already quite a challenge to create innovative kaiseki dishes in Taiwan, especially in Yunlin, which many consider to be a rural area. Boss Zhang of Song Wu has been passionate about developing Japanese cuisine since starting a small Japanese stall on Donghua Road in Douliu over 20 years ago, insisting on the path of innovative Japanese cuisine; during this time, he partnered with friends to open a large Japanese banquet restaurant, but eventually returned to his own creative journey. Cooking is an art, and one can fully appreciate this from the dishes at Song Wu. The chef changes the menu weekly, innovating dishes based on seasonal and locally sourced fresh ingredients, making it a feast for the eyes, aesthetics, and taste. There are appetizers like sashimi made from high-grade Japanese-imported botan shrimp and red snapper, stunning sea urchin and tomato jelly, sushi rolls with salmon roe wrapped in Japanese roasted seaweed, fried needlefish, milk steamed eggs made with only egg whites to cater to health-conscious diners, main courses like French-style lamb chops with foie gras, yam and clam soup, and a dessert salad made of avocado, mango, sweet potato puree, and sakura shrimp. Each dish is visually pleasing and exquisitely delicious. Boss Zhang emphasizes that here, "You can eat cleverly and still feel full," as the portions are definitely ample.
