Using a combination of French, European, Japanese, and Taiwanese baking techniques, along with traditional natural Levain starter, he eliminates the need for artificial sour powders and fermentation agents currently available in the market. To enhance the flavor and aroma, he employs a technique passed down by Japanese masters, fermenting a starter at low temperatures for 24 hours and incorporating it into each French and European country bread to elevate the wheat aroma and chewy texture, replacing artificial additives with ancient production methods to create delicious bread.
