In 1938, the earliest sweet bean ice (mitsumame) was created by Mr. Chen Xi, a resident of Longjing District, who sold it from a pushcart near Taichung Railway Station. At that time, sweet bean ice was made by referencing Japanese "four-fruit ice" and combining it with over ten ingredients. Around 1943, it entered the first market, finally establishing a small stall named "Xin Fatting." During a major fire, Xin Fatting was fortunate to only have its sign and part of the store damaged; thus, after the fire, it was renamed "Hsing Fatting," hoping to turn bitterness into luck. The rich ingredients of sweet bean ice are a beloved flavor remembered by many students, soldiers, and residents of Taichung over the years. In recent years, new products have been developed, such as fluffy ice, handmade tofu pudding, and soft grass jelly. For decades, the business has adhered to a principle of sincerity and dedication, currently run by the third generation, continuing to pass on this nostalgic and delightful taste.
