Tamsui Cultural A-Gei Introduction
A-ge comes from the Japanese term "油揚あげ (abura a ge)," which means "fried tofu skin." Located near Tamkang University on Zhenli Street, "Cultural A-ge" features authentic fish paste, glass noodles, and fried tofu filled with a special savory sauce, which often attracts many celebrities and artists, boosting the restaurant's popularity. Every day at around three in the morning, the owner begins the labor-intensive process of manually cutting open the fried tofu, filling it with glass noodles stir-fried in soy sauce, scallions, and spices, then sealing it with fresh fish paste before steaming it. The elastic fried tofu layers with glass noodles and fish paste create an exquisite texture. The usual way to eat it is to scoop out the glass noodles from the fried tofu, allowing them to absorb the owner’s special sauce, giving it a unique flavor, often enjoyed with a bowl of fish ball soup, which is utterly delightful. On holidays, there are always long lines in front of the shop.
