A-ge originates from the Japanese term "油揚あげ (abura a ge)," which translates to "fried tofu skin." Located near Tamsui University on Zhenli Street, "Cultural A-ge" is known for its authentic fish paste, glass noodles, and oil tofu fillings combined with a special seasoning sauce, often attracting many celebrities and boosting the popularity of this food shop. Every day around three in the morning, the owner starts manually cutting open the oil tofu, filling it with glass noodles stir-fried with soy sauce, chives, and spices, then sealing it with fresh fish paste before steaming it. The combination of elastic oil tofu, noodles, and fish paste creates an exceptional texture.
