Tamsui Cultural Ah-Gei

Taipei Foods

A ge originates from the Japanese term "油揚あげ" (abura a ge), which translates to "deep-fried tofu skins". Located near Tamsui Oxford College on Zhenli Street, "Cultural A ge" attracts many celebrities and artists with its genuine ingredients of fish paste, vermicelli, and stuffed tofu, along with a special seasoning sauce that creates a unique taste. Every day around 3 AM, the owner begins the process of manually cutting open the tofu, filling it with vermicelli stir-fried with soy sauce, scallions, and spices, and then using fresh fish paste to seal it before steaming it. The chewy tofu combined with vermicelli and fish paste creates an exceptional texture. The typical way to enjoy it is to scoop out the vermicelli from inside the tofu, allowing it to soak up the owner's special sauce, resulting in a distinctive flavor, often paired with a bowl of fish ball soup that is tantalizingly delicious. On holidays, there is always a long line in front of the shop.
