"Kang Ping Knife-Cut Noodles" is inspired by the traditional Chinese Five Elements, based in Kaohsiung City's deep-sea fishing industry. The restaurant utilizes local specialties such as swordfish, tuna, chicken, shrimp, and cuttlefish for the filling, while using spinach, goji berries, tomato juice, and squid ink for the dough, creating a variety of colorful dumplings: green jade fish dumplings; white jade swordfish dumplings; red tomato shrimp dumplings; black ink cuttlefish dumplings; and yellow goji chicken dumplings.
