Shih Chuan Squid Soup carefully selects quality ingredients to provide customers with the most genuine experience of squid. The squid used is sourced from Hokkaido, which is a pelagic mollusk that is at its fattest and most tender in August each year. We extract the essence from the tail section, with each squid weighing an average of 5 taels. During the preparation process, the squid is all cut by hand, resulting in thick slices that are crisp yet tender in texture, allowing you to savor the rich flavors of the ocean. The soup base is made from carefully selected premium bonito flakes, which are rich in unsaturated fatty acids, DHA, and vitamin E. We do not add any artificial flavors, instead allowing the natural deliciousness to shine through in our broth. Combined with fresh shredded bamboo shoots and appropriately seasoned, it becomes a soup that is rich in color, aroma, and flavor. For the minced meat topping, Ah Hui-bro has nearly 20 years of expertise and strictly selects plump, authentic Taiwanese red shallots. Following traditional methods, the shallots are sautéed in pork fat over low heat for several hours, then simmered with a family-recipe blend of Chinese medicinal ingredients for 2 hours, naturally releasing an intense, rich aroma that presents a classic flavor. The minced meat is made from premium hind leg meat, mixed evenly with Chinese herbs, green onions, and a small amount of seasoning. It is marinated at -10°C for 12 hours, rapidly preserving the freshness and sweetness of the meat. After cooking, it emits a unique aroma and delivers a crispy texture that will keep you coming back for more.
