Shih Chuan Squid Soup Introduction

Shichuan Squid Soup selects high-quality ingredients to provide customers with the most authentic squid experience. The squid is sourced from Hokkaido and is a migratory mollusk from the Pacific Ocean, with the best and thickest meat in August. The essence is extracted from the tail portion, with a standard weight of around 250 grams. During the production process, it is all hand-cut, resulting in thick pieces that are crispy yet soft when chewed, allowing you to savor the fresh flavors of the ocean. The soup base is made from premium dried bonito flakes, rich in unsaturated fatty acids, DHA, and vitamin E. It is brewed without any artificial flavors, creating a naturally delicious broth that, when combined with tender shredded bamboo shoots and properly seasoned, becomes a visually appealing and flavorful soup. The meat sauce is crafted with nearly 20 years of skill from Ah Huei Bo, who meticulously selects plump, authentic Taiwanese red onion. Following traditional methods, the onions are sautéed in pork lard and stir-fried over low heat for several hours, then simmered with family-secret Chinese herbal ingredients for two hours, naturally releasing a rich meat sauce aroma that showcases a classic flavor. The minced meat is made from high-quality hind leg pork, mixed evenly with Chinese herbs, scallions, fried red onions, and a small amount of seasoning. It is marinated at -10°C for 12 hours, allowing for rapid preservation to maintain the natural sweetness of the meat. After cooking, it releases a unique aroma and has a crispy texture that will keep you wanting more.
