Shih Chuan Squid Soup Introduction

Shih Chuan Squid Soup offers carefully selected ingredients to provide customers with an authentic experience. The squid is sourced from Hokkaido, a migratory cephalopod that is at its plumpest and freshest in August. Each squid is chosen based on the premium quality of its tail, with a standard weight of 250 grams. During the preparation process, the squid is hand-cut into thick slices, ensuring a chewy yet tender texture that allows you to savor the rich flavors produced by the sea. The soup base features premium katsuobushi—dried bonito flakes—that are rich in unsaturated fatty acids, DHA, and vitamin E. It is made without any artificial flavorings, creating a naturally delicious broth enhanced by fresh bamboo shoots. Seasoned appropriately and thickened, it becomes a soup that is full of color, aroma, and flavor. The meat sauce is crafted with nearly 20 years of expertise from Chef A-Hui, who meticulously selects plump Taiwanese red shallots. Following traditional methods, the shallots are sautéed in pork fat over low heat for several hours, and then simmered with a family-recipe blend of Chinese herbal ingredients for an additional 2 hours, creating a rich, aromatic meat sauce that evokes nostalgic flavors. For the minced meat, top-grade hind leg meat is marinated with Chinese herbs, scallions, and a small amount of seasoning for 12 hours at -10°C to ensure freshness and enhance its natural sweetness. After cooking, it releases a unique aroma and offers a crispy texture that will have you coming back for more.
