The founder, Chen Huiqing, is a key figure in the Shimen live fish industry. In the 1970s, as Shimen Reservoir became a popular tourist attraction, Chen Huiqing, at the age of 48, boldly ventured into the live fish industry. The name "Shiyuan" is derived from the Shiyuan dormitory of the Academia Sinica, where the beautiful environment inspired him to name his restaurant after it. With a spirit of innovation and the belief that "innovation" is a necessary condition for a business to thrive, Chen Huiqing has continually developed dishes based on the concept of live fish served three ways, creating over 170 different styles of preparation. To enhance ordering efficiency, he also developed a customized POS system in 1990, which shortened ordering time and improved accuracy.
