Jiangchuan Braised Pork Rice Introduction
In Tainan's traditional market, there is a type of snack sold by vendors called "fan zhuo" (pronounced in Taiwanese). The特色 of "fan zhuo" is that the vendor displays a full table of dishes, and when you want to eat a particular dish, the owner serves you a portion on a small plate. The Taiwanese self-service restaurant concept developed from this idea, and this type of "fan zhuo" snack shop is considered the ancestor of Taiwanese self-service restaurants. Jiangchuan Braised Pork Rice has been in operation for over half a century and still maintains this traditional "fan zhuo" style of service. However, they also adapt to changing times, offering takeaway lunch boxes alongside the old-fashioned dining experience in the restaurant.
