Kaohsiung: Zhenfang Mullet Roe Learning Factory Introduction
【Evaluation Validity Period: 2023/05/16~2026/05/15】 For 400 years, the black mullet has been the fish that resonates most deeply with the people of Taiwan. Many fishermen have built their families and fortunes through this precious fish, and during the cold winters, there are few things as delightful as a warm bowl of black mullet rice noodles. A wedding banquet without mullet roe would be incomplete, and giving gifts during festivals without mullet roe would be considered impolite. The trustworthy black mullet is like an old friend, bringing joyful news to Taiwan; its significance to the people of Taiwan is akin to an unforgettable taste that lingers in the mouth. The culture surrounding black mullet is a unique aspect of Taiwan's joyful heritage. Zhenfang Mullet Roe has over 50 years of history, starting in a small 2-ping shop in the Yan Cheng Market, filled with hanging mullet roe. Due to its quality, it garnered customer trust, establishing a strong reputation and stable clientele. After the second generation took over, the business actively introduced professional processing techniques and established standardized procedures, becoming the first mullet roe factory to obtain both ISO 22000 and HACCP food safety certifications. That small shop has stood the test of time, maintaining a deep connection with its loyal customers. Taiwan’s marine resources are abundant, but there are few representative fishery brands. Other countries boast world-famous seafood like king crab from Japan, abalone from Mexico, caviar from Russia, and Yangcheng Lake hairy crab. Taiwan, with its 400-year black mullet culture, is among the most important catches. Through the "Zhenfang Mullet Roe Learning Factory," we aim to carry forward and promote Taiwan's black mullet culture, hoping that mullet roe can become another symbol of Taiwan's glory.
