Yunnan Restaurant Introduction

The rice noodles at Yunnan Small Pavilion are made from raw rice. Selected traditional rice is soaked in water and then ground into rice milk, which is subsequently clarified, poured into molds, and steamed until cooked. The broth that accompanies the rice noodles is a rich stock made by simmering pork and chicken bones together. In addition to the fragrant animal fats, the pork bones add sweetness while the chicken bones contribute umami, resulting in a flavorful broth that is rich and multilayered. The smooth rice noodles, which are full of broth, are served with a variety of toppings including shredded meat, pork liver, poached eggs, and green onions, making it irresistible and prompting one to keep coming back for more.
