Tang Ji Rice Noodles Introduction
Rice noodles are a dietary habit formed by the people of Yunnan over many years, especially for breakfast. Fresh rice noodles are typically blanched in boiling water for about half a minute and then placed in a bowl, to which various seasonings and a sauce known as "hat" are added, followed by broth. The owner says one reason why people in Yunnan love to eat rice noodles in the morning is that it's quick.
