This technique results in a duck that is sweet yet not cloying, with a meaty texture that is resilient and satisfying. First, high-quality ducks are selected and slowly cooked in a large pot for one hour to reduce oil content. Then, a combination of herbal medicine, brown sugar, soy sauce, wine, ginger, and other seasonings is added, and the mixture is simmered over low heat. The braising soup and the duck's natural juices eventually "concentrate" into a rich sauce, which is repeatedly drizzled over the duck.
