Renjia Liangmian (Original Store) Introduction

Founded in 1959 in the Pingtung Air Force Village, the well-known Pingtung Renjia Liangmian currently has six locations across Taiwan. The owner mentions that Sichuan people are adept at using sesame sauce to mix with various foods, including noodles, cold skin, and shredded chicken. In the early days, cold noodles were virtually nonexistent in Taiwan until people from other provinces introduced them, making cold noodles popular. There is no secret recipe for cold noodles; common condiments found in every household's kitchen make up the sauce components. The key lies in the proportions, with diluted sesame paste, vinegar, sweet soy sauce made from a mix of soy sauce and sugar, authentic Sichuan spicy oil that is both numbing and pungent, as well as garlic sauce, ground peanuts, and sesame oil, creating a beloved flavor that has been passed down from one generation to the next.
