Renjia Liang Mian (Original Store) Introduction
Founded in 1959 in the Pingtung Air Force Village, the renowned Pingtung Renjia Cold Noodles now has six locations across Taiwan. The owner mentions that Sichuan people excel at using sesame sauce for mixing, allowing noodles, cold noodles, and shredded chicken to all be mixed together. In the early days, cold noodles were virtually nonexistent in Taiwan, and it wasn't until the arrival of people from other provinces that cold noodles became popular. There is no secret recipe for cold noodles; the ingredients are common seasonings found in every household kitchen, with the key being the proportions. The mixture includes diluted sesame sauce prepared with water, sweet soy sauce made from vinegar, soy sauce, and sugar, authentic spicy oil from Sichuan that is both numbing and pungent, as well as garlic juice, peanut powder, and sesame oil, resulting in a delightful flavor that is passed down from generation to generation.
