Renjia Cold Noodles (Original Store) Introduction

Established in 1959 in a military village in Pingtung, the time-honored Pingtung Renjia Liangmian now has six locations across Taiwan. The owner mentioned that Sichuan people are skilled at using sesame sauce for mixing various foods, including noodles, cold skin, and shredded chicken. In the early days, cold noodles were virtually unknown in Taiwan until people from other provinces arrived, popularizing this dish. There is no secret recipe for cold noodles; common seasonings found in every household's kitchen are integral to the cold noodle sauce. The key lies in the proportions, mixing diluted sesame paste with vinegar, sweet soy sauce made from soy sauce and sugar, authentic Sichuan spicy chili oil that is both numbing and pungent, as well as garlic, peanut powder, sesame oil, and more, creating a delicious flavor that has been passed down through generations.
