Ren's Cold Noodles (Original Store) Introduction
Established in 1959 in the Pingtung Air Force Village, Pingtung Renjia Liangmian is a well-known local brand that currently has six locations across Taiwan. The owner mentions that Sichuan people are skilled at using sesame sauce to mix with various foods; noodles, cold noodles, and shredded chicken can all be combined with it. In the early days, cold noodles were virtually unknown in Taiwan until the arrival of immigrants from other provinces, which popularized the dish. There is no secret recipe for cold noodles; common seasonings found in households are key components of the cold noodle sauce. The secret lies in the proportions, combining diluted sesame paste with vinegar, sweet soy sauce made from soy sauce and sugar, authentic Sichuan spicy oil that is both numbing and alluring, as well as garlic juice, peanut powder, and sesame oil, creating a delicious flavor that has been passed down from one generation to the next.
