Zhushan Yi Mian Introduction

The yibian (thin noodles) here is significantly different from the usual ones found elsewhere. The owner specifically requested the factory to make the noodles thinner, as he believes that thinner noodles taste better, while thicker ones do not. Once the noodles are cooked, they are immediately drizzled with lard and soy sauce. The owner also has a unique recipe for the lard: he re-cooks the purchased lard, ensuring that it is cooked just right—cooked enough to avoid sticking to the pot, or else the entire pot of lard would have to be discarded. The chili oil is also made by heating salad oil with chili powder, which adds a special aroma alongside the spiciness that is not found in other places. Additionally, there is a unique chili sauce, and combining both sauces to mix with the noodles creates a sweet and spicy flavor that is particularly delicious. The broth in the restaurant is also unmatched, with the bone broth being especially fragrant and tender without any visible bones. The wonton soup in the restaurant is also distinctive, with the wontons having a savory-sweet flavor from the soy sauce, a chewy skin, and juicy fresh meat filling.
