After more than thirty years, Duck Meat Hsu has evolved from a small stall to two stores with a constant flow of customers. Hsu Wen-he, who grew up in Lugang, Changhua, moved to Taipei by himself as a teenager and worked in a hotel. His enthusiasm for cooking led him to secretly learn from the chefs, which laid the foundation for the success of Duck Meat Hsu. The dishes here are almost all well-known; the boss says that the process of preparing the duck is quite extensive. Freshly slaughtered ducks (using frozen ducks doesn't achieve the same taste) are first steamed, then soaked in the boss's unique formula that has been developed over more than thirty years, and finally smoked. This smoking technique is, of course, the boss's biggest secret for his livelihood. The duck meat noodles require a broth simmered from the duck meat itself, ensuring that the flavor is fully extracted and the duck does not become tough.
