After more than thirty years of operation, Duck Meat Xu has grown from a small stall to two stores that attract a steady stream of customers. Almost everything in the restaurant is highly recommended: duck meat noodles, stir-fried offal, and a variety of side dishes. Xu Wenhe, who grew up in Lukang, Changhua, moved to Taipei alone for work as a teenager, starting in a hotel. He was passionate about cooking, so he secretly learned from chefs, which laid the foundation for the successful Duck Meat Xu. The restaurant’s offerings are well-regarded, including duck meat noodles, stir-fried offal, and various side dishes. The owner explains that the process of preparing duck is quite extensive. Freshly slaughtered ducks (as frozen ducks lack the same texture) are first steamed, then soaked in the owner's unique recipe developed over thirty years, and finally smoked. This smoking technique is certainly a closely guarded secret of the owner. The duck meat noodles require a broth made from simmering duck meat, ensuring that the essence of the duck is fully released without making the meat tough.
