Jiu Ling Restaurant (formerly Ying Cuisine) Introduction
Ying Cuisine was a dream teahouse in Tainan during the Japanese colonial period, founded and managed by Amano Kyukichi, a Japanese chef renowned as "the best knife in Taiwan." Located in the center of Tainan City, nearby important offices and public buildings such as the Tainan Prefectural Office, City Council, Joint Office Building, Chianan Canal Association, Public Hall, and the Quanyeh Bank, it became a popular venue for banquets and gatherings among political and business elites at the time, earning the nickname "the underground decision-making center of Tainan." The cuisine at Ying Cuisine was of high standard, and the grilled eel rice became famous. In 1923, when Emperor Showa was still the crown prince, he visited Tainan and during his stay at the governor's residence, Ying Cuisine was designated to provide his meals.
