The products of Xinyuan Soy Sauce Factory are still made using ancient methods; after soaking and boiling the soybeans, they ferment with koji for 4 to 5 days, then add salt into jars and allow them to mature for 3 months. This process yields fermented soybeans for making doubanjiang and sauce for soy sauce. Although Xinyuan Soy Sauce Factory is not large, the lively explanations from the owner allow visitors to experience and understand the handmade soy sauce production process, while also feeling the owner’s passion and dedication to tradition.
