However, with changes in industrial structure, it has now become the only remaining traditional soy sauce factory in the vicinity that insists on pure hand-crafted production. The products of Xin Lai Yuan Soy Sauce Factory are still made following ancient methods, using soybeans that have been soaked and cooked, fermented for 4 to 5 days with koji, then salted in jars and aged for 3 months. The soybeans can then be used to make fermented black beans, while the sauce is cooked to become dark soy sauce. Although Xin Lai Yuan Soy Sauce Factory is not large in scale, the lively explanations from the owner allow visitors to experience and understand the manual soy sauce making process, while also feeling the owner's passion and dedication to tradition.

Xinyuan Soy Sauce Factory is located in Budai, Chiayi. In the past, due to its proximity to salt fields, it was convenient for salt extraction, resulting in many soy sauce factories in the area. However, with changes in industrial structure, it has now become the only remaining traditional soy sauce factory in the vicinity that insists on pure handmade brewing. The products of Xinyuan Soy Sauce Factory are still made using ancient methods and handmade techniques. After soaking and boiling the soybeans, they are fermented with koji for 4-5 days, then salted and placed in jars for a maturation period of three months, after which the soybeans are used to make fermented black soybeans, and the liquid is boiled down to create soy sauce. Although Xinyuan Soy Sauce Factory is not large in scale, through the lively explanations of the owner, visitors can experience and learn about the handmade soy sauce-making process while feeling the owner's passion and dedication to tradition.
