New Source Soy Sauce Factory Introduction
Hsin Yuan Soy Sauce Workshop is located in Budai, Chiayi. In the past, it was near salt fields, making salt procurement convenient, which led to a proliferation of soy sauce factories in the area. However, with changes in the industrial structure, it is now the only remaining soy sauce factory nearby that insists on traditional handcrafted brewing methods. The products of Hsin Yuan Soy Sauce Workshop are still made using ancient methods and handcrafted techniques. The boiled soybeans are fermented for 4 to 5 days to produce koji, salted in jars, and then aged for 3 months, allowing the extraction of fermented soybeans to make fermented black beans and the extraction of the sauce to create soy sauce. Although Hsin Yuan Soy Sauce Workshop is not large, the vivid explanations from the owner allow visitors to experience and understand the handcrafted soy sauce-making process, while also feeling the owner's passion and dedication to tradition.
