Xin Liao Yuan Soy Sauce Factory is located in Budai, Chiayi. In the past, it was close to salt fields, making salt procurement convenient, which led to the proliferation of soy sauce factories in the area. However, with the changes in industrial structure, it has now become the only remaining long-established soy sauce factory in the vicinity that insists on traditional handmade brewing. The products from Xin Liao Yuan Soy Sauce Factory are still made using ancient methods, with steamed soybeans fermented with starter culture for 4 to 5 days, salted in jars, and then matured for 3 months. This process allows the extraction of fermented soybeans to produce fermented black soybeans and the boiling of the sauce to make dark soy sauce. Although Xin Liao Yuan Soy Sauce Factory is not large in scale, the owner's vivid explanations provide visitors with an experience and understanding of the handmade soy sauce production process, while also conveying the owner’s passion and dedication to traditional methods.
