Sublime’s Franco-Taiwanese Fusion? The most humorous French cuisine in Chiayi features deep-fried squid, grilled meat dumplings, and salt and pepper chicken on the table, with chicken rice on the menu! One can't help but wonder, is this really a French restaurant? Chef Jerry of Bistrot Pichon, who previously worked at the Grand Hotel Taipei, returned to Chiayi to start a business, deciding to overturn the common perception of French cuisine. He replaces the distant dining environment with a warm family kitchen and uses French techniques to reinterpret Taiwanese street food flavors, showcasing extraordinary creativity and humor. What is clearly a salad is called deep-fried squid, featuring tender cuttlefish with lettuce, hiding a raw-grade scallop at the bottom, and the dipping sauce tastes surprisingly like oyster omelet… The butter spread on the bread carries the aroma of the grilled meat dumpling leaves… The so-called "salt and pepper chicken" is ultra-thin sheets of native chicken meat, pounded and then slowly pressed into thin slices. Setting aside the chef’s playful side, his duck confit is top-notch in Chiayi. The chef's family has cooked for disadvantaged children at orphanages across Taiwan, and during the pandemic, they launched meal vouchers to support those in need. Truly heartwarming.
