Sublimation of Taiwanese-French fusion? The most humorous French cuisine in Chiayi features dishes like fried squid, grilled meat sticky rice dumplings, and salty crispy chicken on the table, with chicken rice on the menu! One can’t help but wonder, is this really a French restaurant? Chef Jerry of Pissonni French Bistro, who once worked at the Grand Victoria Hotel, returned to Chiayi to start his own business, aiming to overturn the common perception of French cuisine by replacing the distant dining environment with a warm family kitchen, using French techniques to reinterpret the flavors of Taiwanese street food, showcasing extraordinary creativity and humor. Clearly a salad, but called fried squid, features tender cuttlefish with lettuce, hiding a raw-grade scallop underneath, and dipping sauce that surprisingly tastes like oyster omelet...... The butter spread on the bread carries the aroma of the grilled meat sticky rice dumplings...... The so-called "salty crispy chicken" is made from local chicken meat that is pounded and slowly pressed into thin slices. Setting aside the chef's playful antics, his confit duck is among the best in Chiayi. The chef's family has cooked for underprivileged children at childcare institutions across Taiwan and even launched meal vouchers during the pandemic to help those in need. Truly heartwarming.
