A fusion of Taiwanese and French cuisine? The most humorous French restaurant in Chiayi features dishes like fried squid, grilled meat sticky rice dumplings, and salty crispy chicken on the table, with chicken rice also on the menu! One can't help but wonder, is this really a French restaurant? Chef Jerry of Pisoni French Bistro, who previously worked at the Grand Hotel, returned to Chiayi to start his own business, aiming to overturn common perceptions of French dining. He replaces the distanced dining environment with a warm homely kitchen and employs French techniques to reinterpret Taiwan's street food flavors, showcasing extraordinary creativity and humor. A salad called "Fried Squid" features tender squid paired with lettuce, hiding a raw-grade scallop underneath, and the dipping sauce surprisingly tastes like oyster omelet... The butter spread for the bread carries the aroma of grilled meat sticky rice dumplings... The ultra-thin meat paper named "Salty Crispy Chicken" is made from pounding and slowly flattening free-range chicken. Setting aside the chef's playful spirit, his confit duck is top-notch in Chiayi. The chef’s family once cooked meals for underprivileged children at orphanages across Taiwan and even launched meal vouchers during the pandemic to help those in need. Truly heartwarming.
