Sublime's fusion of Taiwanese and French cuisine? This is the funniest French restaurant in Chiayi, where you can find fried squid, grilled rice dumplings, and salty crispy chicken on the table. The menu even includes chicken rice! One can't help but wonder, is this really a French restaurant? The chef of Pisons, Jerry, who previously worked at the Grand Hotel, returned to Chiayi to start his own business, aiming to overturn the common perception of French cuisine by replacing the distant dining atmosphere with a warm family kitchen, and interpreting Taiwanese street food flavors with French techniques, showcasing exceptional creativity and humor. A salad called fried squid features tender cuttlefish paired with lettuce, hiding a raw-grade scallop underneath, and dipping sauce that surprisingly tastes like oyster omelet... The butter spread on the bread gives off the aroma of the grilled rice dumpling's bamboo leaves... The "salty crispy chicken" is an ultra-thin meat paper made from pounding and slowly pressing local chicken into thin slices. Setting aside the chef's playful spirit, his confit duck is top-notch in Chiayi. The chef's family once cooked for underprivileged children at a children’s home across Taiwan, and during the pandemic, they launched a meal voucher program to provide warmth to those in need.
