A fusion of Taiwanese and French cuisine? The most humorous French restaurant in Chiayi features dishes like squid pancakes, grilled meat rice dumplings, and salty crispy chicken on its menu, along with chicken rice! One can't help but wonder, is this really a French restaurant? Chef Jerry of Pisoni French Bistro, who previously worked at the Grand Hotel, returned to Chiayi to start his own business, aiming to overturn the common impressions of French cuisine by replacing the typically distant dining environment with a warm, family-style kitchen. He creatively interprets the flavors of Taiwanese street food using French techniques, showcasing exceptional creativity and humor. What is clearly a salad is amusingly called "squid pancake," featuring tender cuttlefish paired with fresh greens, hiding a raw-grade scallop underneath, and the dipping sauce surprisingly tastes like oyster omelette... The butter spread on the bread is infused with the fragrance of the grilled meat rice dumpling leaves... The so-called "salty crispy chicken" is made from free-range chicken that is pounded and slowly pressed into thin sheets. Setting aside the chef's playful spirit, his confit duck is one of the best in Chiayi. The chef's family has cooked for underprivileged children at orphanages across Taiwan, and during the pandemic, they even launched a voucher program to help those in need. It's truly heartwarming.
