Haohao + Manju Curry Introduction

Hao Hao Jia Slow-Cooked Curry encourages you to enjoy your meal and savor the flavors. Chef Jasper has worked in several European restaurants and previously operated a small bistro in Taipei. After returning home to assist with the family’s grape orchard business, he developed the idea of opening a small restaurant in Chiayi, which led to the establishment of "Hao Hao Jia," focused on Southeast Asian slow-cooked curry. Jasper's favorite dish to prepare is red wine braised beef. He stumbled upon Southeast Asian slow-cooked curry beef, and the intricate cooking techniques of both are quite similar, allowing for a fusion of flavors using spices he loves, such as fennel, cardamom, and cloves. The cooking process also incorporates many vegetables and fruits, resulting in a rich, mildly sour, and layered flavor that differs from traditional curry. The beef utilizes two different cuts, providing a satisfying experience of varied textures, despite the more labor-intensive preparation. Although there are several curry spots in Chiayi, the one focusing on Southeast Asian flavors is currently "Hao Hao Jia." The chef also recommends the newly launched Southeast Asian chicken with fried wonton, a fragrant soup curry. Naturally, Jasper's expertise in Italian cuisine will also appear on the menu to satisfy lovers of international dishes. Image source: Chiayi City Government Tourism Office | Photography: Ma Ge
