Vegetable Market Hot Pot (Minsheng North Road) Introduction

A down-to-earth Taiwanese retro dining experience. The newly opened Shuying Market Hot Pot on Minsheng North Road features an atmosphere reminiscent of a traditional market, emphasizing "health" with an all-you-can-eat vegetarian offer for NT$300, supplying around 40 types of fresh vegetables, eggs, tofu, and rice/noodles. Guests can pick ingredients from a self-service counter, resembling the experience of shopping at a wet market, making vegetarian culture more relatable. The space is decorated in a Taiwanese retro style, with familiar old-fashioned plastic bowls on the tables, proudly proclaiming, "You decide the outcome between vegetables and meat." There are six refreshing soup bases available, and some rarely found vegetables such as black pearl corn, sweet bell peppers, and water chestnuts. Open late on weekdays until the early morning, and offering lunch only on weekends, it has become a new choice for late-night snacks in Chiayi. Meat lovers need not worry, as a variety of meats and seafood are available for a la carte order, and from 10 PM, couples dining together receive an additional platter of meat or clams. The owner feels that all his efforts are worthwhile when he hears customers say, "I didn’t know eating vegetables could be so filling."
