Vegetable Market Hotpot (Minsheng North Road) Introduction
A down-to-earth retro-style Taiwanese dining experience. The newly opened Shuying Market Hot Pot on Minsheng North Road offers a unique dining environment by incorporating the atmosphere of traditional markets, focusing on "health" with an all-you-can-eat vegetarian option priced at 300 TWD. It serves about 40 types of fresh vegetables, eggs, tofu products, rice, and noodles, allowing customers to pick their ingredients from a self-serve station, creating an illusion of shopping in a market. This design makes vegetarian culture more accessible. The space is decorated in a retro Taiwanese style, with familiar old-fashioned plastic bowls on the tables, boldly proclaiming, "You decide the win or loss between vegetables and meat." They offer six types of refreshing broth, and include less common selected vegetables such as black corn, bell peppers, and water chestnuts. Open late on weekdays until midnight, and only adding lunch service on weekends, it has become a new option for late-night dining in Chiayi. Meat lovers need not worry, as a variety of meats and seafood are available for individual order, and from 10 PM, pairs of diners receive an extra plate of meat or clams. The owner says he feels all his efforts were worthwhile when he hears customers say, "I didn’t know eating vegetables could be so filling."
