Chiayi's trendiest Japanese street food stall, an old shop at the corner transformed into a photo spot by night, is located near Datung Elementary School in Chiayi City, at the intersection of Xinrong Road and Chenggong Street. At the corner, two lanterns light up, displaying the words "Mao Sheng." Established over forty years ago, Mao Sheng Sushi is a cherished memory for many long-time Chiayi residents. After the second generation took over, they hired the well-known design company "Benshih Space Production" for renovations and brand identity planning. This transformed the cozy community sushi stall into a modern vintage hotspot in Chiayi, attracting young people and tourists alike. After the renovation, the sushi shop always has long lines on weekends, but on weekdays, it mainly serves local Chiayi customers. The scene of the owner chatting with regular patrons at the counter remains unchanged, only the background has shifted. As for the dishes' specialties, the chefs at Mao Sheng remain true to their long-standing position of affordable Taiwanese-style Japanese cuisine, with classic dishes such as salad, sashimi, pork cutlet, and various side dishes being quite popular among guests.
