Maosheng Sushi Introduction
The trendiest Japanese street food shop in Chiayi, transforming an old corner store into a photo opportunity after dark, is located near Datung Elementary School at the intersection of Xingrong Road and Chenggong Street. Two lanterns are lit at the corner, displaying the characters "Mao Sheng." Established for over 40 years, Mao Sheng Sushi has become a memory for many old-timers in Chiayi. After taking over, the second generation hired the well-known design firm "Benshi Space Production" to renovate the shop and plan its brand identity. The once warm community sushi shop has turned into a modern retro landmark in Chiayi, attracting young people and tourists. After the renovation, Mao Sheng Sushi often sees long lines on weekends, while weekdays are still focused on local Chiayi customers. The scene of the owner chatting with long-time patrons at the sushi counter has changed in backdrop but remains as warm as ever. Regarding the specialty dishes, the chefs at Mao Sheng are committed to their long-standing affordable Taiwanese-style Japanese cuisine, with classic offerings like salads, sashimi, pork cutlets, and various side dishes, all of which are well-loved by many customers. Is there a unique Chiayi element in their cuisine? The answer is surprisingly "mayonnaise"! It is revealed that the mayonnaise at Mao Sheng Sushi is unique, specially commissioned from a specific manufacturer with a proprietary "white vinegar," which has a notably short shelf life and is supplied fresh.
