Lukang Hsinchu Jin Shrimp Balls Introduction
Located next to the Lukang Folk Arts Museum, "Hsinchu Shrimp Balls" has a history of eighty years spanning two generations. The first generation, Fu Jin-Jiang, moved from Hsinchu to Lukang and set up a stall in the market, creating the Lukang shrimp ball, which he named "Hsinchu Jin." It was considered a delicacy for high-end banquets at the time. The second generation, Fu Hsi-Chuan, revived the shrimp ball during a decline in its popularity by adhering to traditional methods, using high-quality pure sand shrimp and a unique recipe, making it attractive in color, aroma, and taste.
