The idea of combining a restaurant, café, and art gallery into one establishment comes from the founder of "R5 Bistro," Zhong Xiaoze. Having previously worked as a software engineer, he always dreamt of opening a store. After careful evaluation and consideration, he made the bold decision to leave his job to start his own business, sharing his culinary aesthetic at R5 Bistro with every customer who walks in. Zhong, who once had a working holiday experience during his student years, has tasted very pure American burgers — devoid of excessive sauces, with the meat as the soul of the burger. "Although simple, it has a refreshing taste," he recalls. "But after returning to Taiwan, I've never experienced a similar feeling." This motivation solidified his goal of opening a new-style Western cuisine restaurant. Zhong proudly mentions that all the dishes in the restaurant use natural ingredients, insisting on no added MSG or strongly flavored seasonings. Not only is it healthy, but the focus is also on allowing customers to enjoy the true flavors of pure food. Through this culinary spirit, he aims to recreate the simplicity he once experienced. "The beverages and desserts are also of professional quality, such as our specialty coffee and freshly baked handmade desserts," Zhong adds. Besides his dedication to Western dishes, he wants to ensure the quality of drinks and desserts as well. "I hope that customers who come here see this not just as a restaurant but also as a café and dessert shop." This ambition drives him to pay meticulous attention to detail, continuously honing his skills through discussions with like-minded individuals to accumulate experience and expertise.
