Hai Long Meat Dumpling Introduction

The founder of "Hailong Rice Dumplings," Xin Haishu, returned home from the Philippines after serving as a "Japanese soldier" at the age of 20. He began selling meat and vegetable rice dumplings at the traditional market near the Water Fairy Temple in Tainan. Since he was often called "Hailongzi," he named his shop "Hailong Rice Dumplings." Hailong Rice Dumplings are made by stuffing stir-fried pork, uncooked rice, meat chunks, salted duck eggs, shiitake mushrooms, and peanuts into bamboo leaves, which are then tightly wrapped. Except for the stir-fried pork, all ingredients are raw. The rice dumplings are boiled in water, with more water added as it cooks. After about two hours, the delicious Hailong Rice Dumplings are ready. The owner of Hailong Rice Dumplings mentioned that their dumplings "can be eaten frequently without causing acid reflux because the glutinous rice is washed and drained immediately, which not only reduces stomach acid secretion but also increases the chewiness of the dumplings."
