Budai Stop Look Eat Oyster Omelette Introduction
Not many have heard of oyster pancakes, and even fewer have tried them, despite being developed for 20 years. Many have eaten oyster omelettes or oyster fritters, but few would associate them with oyster pancakes. In fact, oyster pancakes are a combination of oyster fritters and oyster omelettes, and the person behind this invention is Lin Wu Hsiung, the owner of "Stop and Eat Oyster Pancakes" in Budai. Born in 1967, Lin originally made a living in aquaculture, but due to fluctuating income, he decided to start a business to support his family, encouraged by friends. Not wanting to sell the same items as others, he aimed to create something unique. He reminisced about the oyster fritters and oyster omelettes he had enjoyed since childhood and experimented with combining them, which led to the concept of oyster pancakes. After some trial and error, he began selling them at night markets, continuously improving based on customer feedback and suggestions. The oyster pancake evolved from a large size, often too big for kids or customers to finish, to its current form. The outer skin of the oyster pancake is a specially developed dough made from flour, and the filling includes chives, glass noodles, oysters, and eggs. The method involves stir-frying the glass noodles first and then mixing them with the chives before preparing the dough.
