National Treasure Potato Pork Trotter Introduction
One stall of Potato Pork Knuckles has boosted economic activities at the southern end of Guosheng Bridge, marking an economic miracle created by "National Treasure Potato Pork Knuckles." The founder, Li Xiufen, originally sold watermelons and betel nuts at the south end of the Guosheng Bridge. She was introduced to selling Potato Pork Knuckles while shopping at the market, and unexpectedly, it became a hit, leading her to specialize solely in Potato Pork Knuckles. The selling location has moved four times due to road expansion, lease expirations, and landowner's decisions to reclaim the land for business, finally relocating to its current site in 2004. The ingredients for Potato Pork Knuckles include potatoes, flower beans, and pork knuckles. The method involves purchasing chopped pork knuckles, cleaning them, boiling until bubbling, removing the blood, and setting them aside. The boiled pork knuckles are then added to a pot with potatoes and flower beans, simmered for over two hours to complete the dish. The freshly simmered Potato Pork Knuckles have a strong broth flavor, which is diluted with water, and after adding seasonings, it is served in bowls topped with coriander. National Treasure Potato Pork Knuckles does not contain whole pieces of meat, focusing purely on the pork knuckle parts, allowing diners to enjoy the fun of nibbling on the pork knuckles. Wu Mingji is Li Xiufen's only son, and he comes to help with the pork knuckles every morning before work and assists in the shop after work and on holidays.
