Tucheng Guo's Eel Noodle Introduction

Guo Qiting (born in 1964) and his wife Zhang Shuhua started selling eel noodles at a stall in the pedestrian walkway of their home for a living after they got married. Despite more than 20 years of challenging business, they managed to support their family. The ingredients for Tucheng Guo’s eel noodles include eel, wheat noodles, onions, garlic, cabbage, and green onions. When customers place an order, pork lard is heated in a pan, followed by the addition of eel, wheat noodles, onions, garlic, cabbage, and green onions. After a quick stir-fry, sauce is added, and the dish is plated and served. The control of heat and timing greatly affect the texture and crispness of the eel noodles, which is a skill that Guo Qiting excels at. Since the boss lady, Zhang Shuhua, does not kill any animals, the eels bought by Tucheng Guo are already processed. After the Ting Hsin cooking oil scandal broke out, Guo Qiting stopped using commercially available salad oil, opting instead to buy "Meat Oil" from the market to make his own oil at home. The sauce is made with a proprietary blend of soybean oil, vinegar, sugar, and other ingredients.
