The founder, Chen Huiqing, is a key figure in the Shimen live fish industry. In the 1970s, Shimen Reservoir became a popular tourist destination, and at the age of 48, Chen Huiqing boldly entered the live fish industry. The name "Shiyuan" comes from the Shiyuan dormitory of the Academia Sinica, which Chen found to have beautiful surroundings when he established the restaurant. Chen believes that "innovation" is essential for a business to thrive, and based on the concept of three dishes from live fish, he continually developed new ways to serve it, leading to over 170 different methods of preparation. In 1990, he even created a customized POS system to improve ordering efficiency, shortening order times and increasing accuracy.
