The founder, Chen Huiqing, is a key figure in the Shimen live fish industry. In the 1970s, the Shimen Reservoir became a popular tourist attraction, and 48-year-old Chen Huiqing decisively entered the live fish industry. The name Shiyuan originates from the Shiyuan Dormitory of the Academia Sinica; Chen Huiqing found the environment beautiful and named the restaurant after it. Emphasizing breakthroughs and continuous innovation, Chen Huiqing believes that "innovation" is one of the necessary conditions for a business to stand strong. Building on the three ways to eat live fish, he has continuously developed over 170 methods of preparing live fish, creating a trend for consuming live fish. To improve ordering efficiency, he tailored a POS system in 1990 to shorten ordering time and increase accuracy. At that time, Chen Huiqing also purchased a parking lot larger than the restaurant, which raised questions from many, but today people realize his foresight amidst parking shortages.
