Located on Longtan Cultural Road Live Fish Street, "Shiyuan Live Fish" stands out with its striking red Chinese palace-style exterior. The founder, Chen Huiqing, is a key figure in the Shimen live fish industry. In the 1970s, Shimen Reservoir became a popular tourist destination, and at the age of 48, Chen Huiqing boldly entered the live fish industry. The name Shiyuan comes from the Shiyuan dormitory of the Academia Sinica, where Chen found the environment beautiful and named his restaurant after it. To remain competitive and innovative in business, Chen believes "innovation" is one of the essential conditions. Based on the concept of three ways to enjoy live fish, he continuously developed and created a trend of multiple ways to eat live fish, with over 170 different methods now available. To improve ordering efficiency, he custom-built a POS system in 1990 to shorten order times and increase accuracy. At the time, Chen Huiqing also purchased a parking lot larger than the restaurant itself, which raised doubts among many; today, faced with insufficient parking spaces, everyone understands his foresight. Shiyuan Live Fish's signature dish is the Old Dad's Fish, a recipe the founder made for his daughter, where authentic Hakka pickled vegetables are finely chopped and slowly simmered to impart a sweet, salty, and sour flavor to the fish.
