Located on Longtan Cultural Road Live Fish Street, "Shiyuan Live Fish" features a striking red Chinese palace-style exterior. Founded by Chen Huiching, he is a key figure in the Shimen live fish industry. In the 1970s, Shimen Reservoir became a popular tourist attraction; at the age of 48, Chen Huiching resolutely entered the live fish industry. The name "Shiyuan" comes from the Shiyuan Dormitory of the Academia Sinica, where Chen Huiching saw the beautiful environment and named his restaurant accordingly. To stand firm and innovate, Chen believes that "innovation" is one of the necessary conditions for a business. He took the concept of three ways to eat live fish as a foundation and constantly developed it, resulting in over 170 different methods of preparation. To enhance ordering efficiency, in 1990, he customized a POS system to shorten ordering time and improve accuracy. At that time, Chen also purchased a parking lot larger than the storefront, leading to skepticism from various sectors; today, facing insufficient parking spaces, everyone understands his foresight.
