Owner Chef Lin, who specializes in omakase, is dedicated to developing the flavors that belong to Zhuwei Fishing Port, hoping every meal is a cherished memory. Chef Lin mentioned that many people mistakenly believe that the restaurant's name "Sanben" implies it is a Japanese cuisine restaurant. In reality, it honors a Japanese chef who once taught him. Besides Japanese cuisine, he offers a diverse range of dishes, including Hakka, Minnan, and Jiangsu-Zhejiang cuisine. He strives to innovate and not let customer expectations down. Whether it's sautéed sea cucumber or steamed shrimp, sliced bluefin tuna or stir-fried kidneys with sesame oil, Chef Lin creates dishes that are rich in flavor, aroma, and presentation. "It's all about trust; many regulars hardly order. After discussing a price range, they just let me create freely. What I can offer in return is a commitment to fresh ingredients, dedication, and continuous innovation to provide genuine delicacies," Chef Lin, who is approaching his 28th year as a chef, said with both sentiment and gratitude.
