In the past, the Hakka people mostly lived near the hills, and while farmers went up the mountain to farm, Hakka women made mochi from glutinous rice at home since it was the best food to stave off hunger. The reason behind using ginger syrup with brown sugar is for health: brown sugar cools the body to prevent farmers from overheating while working hard in the fields, and ginger syrup keeps out the cold because the mountainous areas are prone to sudden Northwest rain, which could make farmers cold. The term "cow rinsed" refers to the mochi being placed in the ginger syrup, as its shape resembles water buffalo leisurely wandering in a pond during the off-season for farmers, hence the name.
