Every day, we carefully select long white scallions, fresh cabbage, and pork, using a golden ratio of 30% fat to 70% lean meat, freshly slaughtered daily. The dough is uniquely created using a half-fermented method known as 4C pressing, ensuring that each Xiao Long Bao has a thin, chewy skin, is juicy and flavorful.
