The handcrafted Xiao Long Bao is the signature dish of our restaurant. We select long white scallions, fresh green cabbage, and daily freshly slaughtered pork in a golden ratio of 30% fat to 70% lean meat. These ingredients are continuously mixed and beaten in a clockwise direction. Our unique dough is a semi-fermented dough made using a proprietary 4C pressing and fermentation method, resulting in thin, chewy skins that are juicy and flavorful.
