Taipei Xiaolongbao Introduction
The handmade soup dumplings, known as Xiao Long Baos, are the signature dish of our restaurant. Every day, we select long green onions, fresh cabbage, and pork with a golden ratio of 30% fat to 70% lean, which is freshly slaughtered daily. The filling is mixed continuously in a clockwise direction to achieve the best flavor. Our unique dough is made using a specially developed 4C pressed fermentation method, resulting in thin yet chewy wrappers that are juicy and flavorful.
