Jian Guo Park is a well-known senior citizens' park in Hsinchu City, which once thrived as a night market. Over thirty years ago, there were no fewer than forty stalls, including an unnamed noodle stall that became the predecessor of the current "Original Night Market Duck Noodle." At that time, the city government decided to relocate the night market to East Gate Market in order to improve the city’s appearance and traffic. Due to dissatisfaction with the high stall rental fees imposed by the city government, the owner sought alternative locations and erected a sign on Central Road. To help old customers find it, he named it "Original Night Market Duck Noodle." In recent years, the business has flourished, and a branch of "Original Night Market Duck Noodle" opened on Zhongzheng Road. The restaurant's food is divided into two main categories: boiled and stir-fried. There are duck noodles, offal, duck blood, duck intestines, and so on. Eating duck noodles hot is the best method, so the owner emphasizes that the duck noodles must be served piping hot. The duck is not boiled but steamed. The broth used for the duck noodles is made from the flavorful juice extracted while steaming the duck, ensuring the soup is exceptionally delicious. Dishes like the stir-fried duck blood and stir-fried offals are also popular side dishes at the restaurant.
