Jian Guo Park is a well-known senior citizen park in Hsinchu City, which was once a bustling night market. Over thirty years ago, there were more than forty stalls, and a little-known noodle stall was the precursor to the current "Original Night Market Duck Noodle." At that time, the city government decided to relocate the night market to Dongmen Market in order to improve the cityscape and traffic. Dissatisfied with the high stall rental fees charged by the city government, the owner sought another location and put up a sign on Zhongyang Road. To make it easier for old customers to find, it was named "Original Night Market Duck Noodle." In recent years, the business has flourished, and a branch of "Original Night Market Duck Noodle" has opened on Zhongzheng Road. The restaurant's food is divided into two main categories: boiled and stir-fried. There are offerings such as duck noodles, offal, duck blood, and duck intestines. Eating duck noodles while hot is the best way to enjoy them, so the owner emphasizes that the duck noodles must be served piping hot. The duck is not boiled but steamed, and the broth used for the duck noodles is made from the soup extracted during the steaming process, ensuring the soup is exceptionally flavorful. Dishes like stir-fried duck blood and stir-fried offal are also well-regarded small plates in the restaurant.
