Jian Guo Park is a well-known senior citizen park in Hsinchu City, which used to be a vibrant night market. Over thirty years ago, there were no fewer than forty stalls, including an unnamed noodle stall that is the predecessor of today's "Yuan Night Market Duck Noodle." At that time, the city government decided to relocate the night market to Dongmen Market for better city appearance and traffic management. However, due to dissatisfaction with the high rental fees charged by the city government, the owner sought a new location and put up a sign on Zhongyang Road. To help regular customers find the place, it was named "Yuan Night Market Duck Noodle." In recent years, the business has flourished, and a branch of "Yuan Night Market Duck Noodle" was opened on Zhongzheng Road. The menu is divided into two main categories: boiled and stir-fried dishes. Items include duck noodle, offal, duck blood, and duck intestines, among others. Eating the duck noodle while it's hot is the best way to enjoy it, so the owner emphasizes that the duck noodle must be served piping hot. The duck is not boiled but steamed, and the broth used for the duck noodles is made from the flavorful juices extracted during steaming. Thus, the taste of the soup is undoubtedly delicious. Dishes like stir-fried duck blood and stir-fried offal are also well-known specialties of the restaurant.
