Fresh white shrimp from the coastal area of Yunlin, Chiayi, and Tainan in Taiwan presents its nutrition and flavor in an "original" way, overturning traditional eating methods with an unexpectedly crispy texture. No peeling is required, and it remains light and non-sticky. We insist on using the most traditional method to remove the sharp spines from each shrimp head, ensuring a worry-free experience for the eaters. This is a complex process; using a low-temperature oil fryer and a vacuum oil removal machine, the shrimp undergo a vacuum oil extraction process at approximately 100°C, reducing the degree of fat deterioration. This allows for a long shelf life without the addition of preservatives while maintaining essential chitin and astaxanthin, meeting the local demands for zero trans fats, high calcium, and food safety.
