Fresh white shrimp from the Yunlin-Chiayi-Tainan coastal area of Taiwan, presenting the nutrition and flavor in its "original" form, overturning traditional eating methods with an unimaginably crisp texture. No peeling is necessary, making it fresh and non-sticky to the hands. We insist on the most traditional method, carefully removing the sharp spikes from each shrimp head for the consumer's peace of mind. This is a very complicated procedure, using a low-temperature vacuum frying machine, with oil heated to about 100°C, completing the vacuum de-oiling process in a vacuum state. This reduces the degree of oil degradation, allowing for a long shelf life without the addition of preservatives while maintaining the essential chitin and astaxanthin of the food itself.
