In 1989, Shuling Deng, living in the United States, started her journey in baking as she struggled with greasy and salty foods during her pregnancy. After returning to Taiwan, due to the frequent food safety incidents, she established the Heirishi Studio, which provides a service for ordering and delivering naturally leavened bread. Shuling insists that her bread is made with 100% natural ingredients, paired with seasonal produce. Concerned about food additives in semi-finished products, she tries to make the fillings herself and personally visits local farmers to ensure the quality of raw materials. Shuling's method involves using natural sourdough yeast for low-temperature, long-time fermentation, developing natural flavors and textures without any artificial additives. Each loaf of bread in the store undergoes over 40 hours of production, resulting in healthy and nutritious bread. Due to consumer affirmation, Heirishi opened a physical store in 2014, and to enhance product quality, it passed ISO 9001 certification in 2016. Although the process of making naturally leavened bread is complex and time-consuming, often affected by weather conditions, Shuling's persistence is driven by the affirmation and support of her customers. The walls of Heirishi Healthy Bakery are decorated with paintings of a magical forest and fairies, symbolizing that each loaf of bread embodies the magic of "health" and "creativity."
