In an affordable café lies the prestigious hand-brewed coffee. A devastating fire burned down Huang Huixue's home, leaving her with nothing. To help her regain her spirit and find a purpose in life, her friends suggested opening a café, marking the beginning of her journey with coffee and solidifying her faith as a Christian that it was God who opened another window for her. "I find coffee very interesting, and I've gradually gained insights into it," Huang Huixue expresses her deep interest in studying coffee. Indeed, her pride rests in her cold brew coffee, which was developed through this 'play'—instead of expensive equipment, she utilized a dripping apparatus operating on the same principle, balancing different dripping rates and water quality to create distinctive flavors in each cup of cold brew coffee. "Pairing it with the handcrafted banana brownie or passion fruit pound cake made in-store is a great delight," Huang Huixue confidently states. Besides cold brew coffee, the café also features "hand-brewed coffee," where she personally brings the equipment to the customer's table for fresh brewing, using different techniques to present the coffee flavor according to the customer's preference for strength. The coffee beans used in the café are roasted in-house and carefully selected by Huixue. She is also the first cup tester in Chiayi, driven by her love for coffee and her innate tasting ability. Through self-learning and seeking guidance, she astonishingly passed the continuous five-day examination in one attempt, surprising her friends and affirming her determination to run a coffee shop. This journey from nothing to something was not achieved easily; the setbacks and failures only fueled her ambition, aligning with her initial intention to provide professional and delicious coffee in Chiayi.
