Hand-brewed coffee brews the sweetest dreams. Everyone has a different understanding and imagination of "coffee." For some, it may just serve as a stimulant, while others might pursue trends. However, for Wan-Jhen of Evie’s Café, coffee represents a high level of expectation—a medium for the beautiful things in life. Graduated from the Indiana University of Pennsylvania in the United States, she has experienced various working environments in the U.S., China, and Taipei, gaining insights into the lifestyle that truly fits her personality and expectations. After careful consideration, she decided to resign and move towards her ideal future. She wants to use a professional café as a medium to promote the various beauties of life to the public. "The process of starting a business is really tough, facing many obstacles and difficulties, as well as people’s criticism. I couldn't count how many times I struggled between persistence and giving up." After six years of honing her skills and perseverance in roasting, extracting, and tasting coffee, she accumulated customers through the internet and word of mouth, finally opening her store in 2016, becoming a physical platform to share coffee with everyone. By hosting lectures, teaching sessions, sharing meetings, and exhibitions, she transformed the café into a connection of "beauty," encompassing literature, photography, painting, food, design, and even floral arts, handmade crafts, and education. Through providing beautiful coffee and space, she actively shares and communicates the different aspects of beauty and happiness in life with the public. When asked about the items she most wants to share, hand-brewed coffee and cold drip coffee are Wan-Jhen's immediate responses. "Because there are many variations, and it has rich layers, drinking it truly brings happiness!" By carefully smelling the aroma of the dry coffee grounds and tasting both chilled and hot beverages, she shows the varied enjoyment and fun of drinking black coffee. To realize these connections of happiness, Wan-Jhen insists on linking with beautiful coffee, and she says she will continue to work hard. Recommended dishes: Tiramisu, hand-brewed coffee.
