Jipin Shrimp Rice Introduction
Using freshly peeled fire-grilled shrimp, the shrimp meat is quickly stir-fried with green onions to release the savory oil, which drips into the bonito broth made from simmering for over two hours. Basic seasonings such as soy sauce, a bit of sugar, and light salt are added to create the sauce for frying rice. This sauce serves as the base, and then the shrimp juice filtered from the shrimp that were pre-fried with oil and green onion is added. Finally, the hot broth is combined with lard, and the rice is tossed in over high heat, allowing it to fully absorb the bonito sauce and shrimp juice. The finished rice is served in a bowl, topped with the previously stir-fried, rich and fragrant shrimp, creating a dish where each bite emits the fresh, sweet flavor of fire-grilled shrimp.
