Hong Fengfu (born in 1957) and his wife Hong Zhuxiulian started their early business selling oyster omelets, stir-fried seafood, and fried noodles in the vendor area of Nankunshen Daitian Temple, achieving great success and often being overwhelmed with customers. However, in 2006, Nankunshen Daitian Temple reorganized the vendor area, allowing only 20 of over 100 vendors to continue operating. Without being selected, the couple moved back to their home in Ohliau to continue their business. The oyster omelet at A Man Stir-Fry Shop uses a batter made from sweet potato flour. The ingredients include: oysters, eggs, and vegetables. The oysters are of the rock oyster variety, known for their firm texture and higher price; the vegetables can include sweet potato leaves, bean sprouts, and cabbage, while in winter, it’s topped with chrysanthemum greens. The choice of vegetables depends on customer preference; for those who do not like bean sprouts, they can be omitted. The sweet potato leaves are grown by them, ensuring no pesticides are used. The method of making the oyster omelet is as follows: heat oil in a frying pan, add the oysters, crack in the eggs, add the vegetables, and pour in the batter. Once the batter is cooked, flip it over and fry until crispy. Then, serve it with a drizzle of a special tomato sauce, which is not ordinary—it's a mix of tomato sauce with a secret recipe, thickened with sweet potato starch.
