Sanku Seafood Noodles Introduction
"San Gu Seafood Noodles" was originally opened by Chen Qiuli, the daughter-in-law of Chen Yuxia's uncle, in 1969. Chen Qiuli is from Tuchengzi in Annan District. After marrying in San Gu, she worked at Tainan Yicheng Fish Mullet Soup shop. After resigning, she opened a noodle stall in front of Longde Temple in San Gu, selling fish mullet noodles, seafood noodles, and seafood porridge, making it a well-known noodle stall in the San Gu area. In 2010, Chen Qiuli moved to Tuchengzi, Annan District to open a noodle shop, and the San Gu seafood noodle stall was taken over and run by Chen Yuxia. After taking over, Chen Yuxia primarily sold seafood noodles and seafood porridge. The seafood noodles are made with: oil noodles, and the ingredients include: fish mullet belly, fish mullet meat, fish mullet skin, fish mullet balls, and oysters, although oysters are often omitted due to their high price. The method for making seafood noodles is as follows: first blanch the oil noodles and place them in a bowl, then add minced celery, fried shallots, and broth made from fish mullet bones. The fish mullet belly, fish mullet meat, fish mullet skin, and fish mullet balls are boiled until cooked and then poured into the noodle bowl to be served. The method for making seafood porridge is: cooked rice is placed in a bowl for later.
