Sankuchiao 61st Line Oyster Omelette Introduction
"61 Line Oyster Omelette" is the third oyster omelette stall in Sanku Qiaotou Seafood Street, established in 2011. The name "61 Line Oyster Omelette" is derived from its location next to the "National Highway 61" western coastal expressway. The batter used for the oyster omelette consists of wheat flour, and the filling includes cabbage, chives, celery, and oysters. The preparation involves lightly frying the shaped oyster omelettes for later use, then frying them again to order until fully cooked and cutting them into pieces before serving. In addition to oyster omelettes, "61 Line Oyster Omelette" also sells fried tilapia, fried taro cakes, fried taro, and oyster vermicelli. The tilapia is locally farmed and is not the freshwater tilapia. The oyster vermicelli is available in two styles: dry and soup. The dry method involves blanching the vermicelli first; then sautéing garlic, scallion oil, and sesame oil, adding a small amount of water, then mixing in the vermicelli and oysters, and finishing with additional scallions and sesame oil before plating. The soup method involves blanching the oysters first, then frying garlic and scallion oil until fragrant, adding water, and once boiling, adding the vermicelli and oysters, cooking briefly before serving in a bowl.
