Wanjin Township in Pingtung County is a quaint little town, famous throughout Taiwan for its Wanjin Pork Knuckles. Particularly along Minhe Road, there are numerous pork knuckle shops, creating a unique local culture. The originator of Wanjin Pork Knuckles is Lin Hai-hong, who started selling danzai noodles at Wanjin Market at night in 1945. Suddenly, he had a brilliant idea to switch to selling pork knuckles, which became immensely popular due to their exceptional flavor. Wanjin Pork Knuckles are renowned across Taiwan for their unique production process and the special garlic dipping sauce and seasonings used while eating. All the pork knuckles are made from the front legs of pigs, infused with a special herbal secret recipe, and do not include harmful additives like borax. The pork knuckles are meticulously boiled and simmered, resulting in a crispy and fragrant skin, tender and juicy meat, and a non-greasy taste. The combination of skin, meat, and tendons offers a chewy yet slightly crisp texture, making it extremely delightful, especially when paired with the rich dipping sauce that enhances its unique flavor.
