The founder of Wanluan pig trotter is Lin Hai-hong, who started selling danzai noodles in the Wanluan market at night in 1945. One day, he had a sudden inspiration to sell pig trotters instead, which quickly became popular due to their exceptional flavor. The fame of Wanluan pig trotter comes from its special production process, as well as the unique garlic sauce and seasonings used when consumed. The pig trotters used are from the front legs of pigs, prepared with a special herbal secret recipe, without using harmful additives like borax. The pig trotters are carefully simmered, resulting in a crispy skin texture and tender, juicy meat that is not greasy. The combination of skin, meat, and tendons creates a chewy yet slightly crunchy sensation, making it very enjoyable to eat, especially with the rich dipping sauce that adds to its unique flavor.
