Wanjila Pig's Foot Street Introduction
Wanjian Township in Pingtung County is a quaint little town that is famous throughout Taiwan for its Wanjian pig's trotters. Especially on Minhe Road, there are numerous pig's trotter shops, creating a unique local culture. The originator of Wanjian pig's trotters is Lin Hai-hong, who started selling noodle soup at Wanjian Market at night in 1945. One day, he had a brilliant idea to switch to selling pig's trotters, which became immensely popular due to their exceptional flavor. The fame of Wanjian pig's trotters can be attributed to the unique preparation process, as well as the distinctive garlic sauce and condiments that accompany the dish. The trotters are made entirely from the forelimbs of pigs, cooked with a special Chinese herbal secret recipe, without any harmful additives like borax. The trotters are meticulously simmered, resulting in a crispy exterior, tender and juicy meat, and a non-greasy taste. The combination of skin, meat, and tendon provides a texture that is resilient yet slightly crunchy, making it very palatable, further enhanced by the rich dipping sauce that adds to the unique flavor.
