A Bowl of Noodles Introduction
A bowl named "One Small" is meant to allow exquisite and delicious dishes to be enjoyed as a snack, sufficient for about 70% fullness. However, a larger bowl has now been introduced for those with bigger appetites. The owner's philosophy is rooted in the belief that good ingredients are essential, and simple cooking can highlight the natural flavors of the materials. The restaurant features a special baked flatbread called "mo" which, despite not undergoing a fermentation process, is hard yet aromatic. It pairs perfectly with the soups served in the restaurant. The flatbread is broken into small pieces and added to the soup, known as "paomo," soaking in delicious flavors from four kinds of broth, including beef and lamb, creating a unique taste and exceptional texture.
