Jian Guo Park is a well-known senior citizen park in Hsinchu City, where a once-popular night market used to flourish. Over thirty years ago, there were no less than forty stalls, and one unnamed stall selling noodles was the predecessor of today's "Original Night Market Duck Noodle." At that time, the city government decided to relocate the night market to Dongmen Market to improve the urban landscape and traffic. However, dissatisfied with the high stall rental fees set by the government, the owner sought another location and set up a sign on Zhongyang Road. To make it easier for old customers to find them, they named it "Original Night Market Duck Noodle." In recent years, the business has thrived, leading to the opening of a branch on Zhongzheng Road. The restaurant's food is divided into two main categories: boiled and stir-fried. Dishes include duck noodles, duck offal, duck blood, and duck intestines, among others. Eating the duck noodles while hot is essential, so the owner emphasizes that the noodles must be served very hot. The duck meat is not boiled but steamed, and the broth used for the duck noodles is made from the juices extracted during the steaming process, ensuring a rich and delicious flavor. The stir-fried duck blood and stir-fried offal dishes in the restaurant are also highly praised.
