Jian Guo Park is a well-known senior citizens' park in Hsinchu City, and it was once the site of a bustling night market. Over thirty years ago, there were no fewer than forty stalls, including an unknown noodle stall that is the predecessor of today’s "Original Night Market Duck Noodle." At that time, the city government decided to relocate the night market to Dongmen Market in order to improve the city’s appearance and traffic. However, the owner was dissatisfied with the high rental fees charged by the city government, so he sought another location and set up a sign on Zhongyang Road. To ensure that old customers could find their way, he named it "Original Night Market Duck Noodle." In recent years, the business has thrived, and a branch of "Original Night Market Duck Noodle" was opened on Zhongzheng Road. The food in the restaurant is divided into two main categories: boiled and stir-fried. Menu items include duck noodle, duck organs, duck blood, duck intestines, and more. Eating the duck noodles while they are hot is essential, so the owner emphasizes that the duck noodles must be served steaming hot. The duck is not boiled but steamed, and the broth used for the duck noodles is made from the juice extracted during the steaming process, ensuring the soup's deliciousness. Dishes like stir-fried duck blood and stir-fried duck organs also have a strong reputation among the side dishes.
