Li Jin Traditional Tofu Pudding Introduction
Since its establishment in 1986, Li-Jin Douhua has a history of over 20 years, starting from a tricycle vending stall to now having its own store. Li-Jin's douhua (tofu pudding) is made from pure yellow soybeans that are soaked in water for 3 to 4 hours before being ground, adhering to the traditional method of making douhua, resulting in a strong yellow soybean aroma and a delicate, smooth texture. All ingredients are freshly cooked the day before, ensuring freshness compared to some stores that source from factories. Another unique feature of "Li-Jin Douhua" is the large amount of "fluffy ice" added to the douhua, which differs from other douhua shops where it is typically served with shaved ice and syrup. The rich douhua paired with fluffy ice is refreshing and thirst-quenching. The owner mentions that since students love eating ice, instead of simply drenching it in syrup—which can be difficult to balance—syrup is first made into ice cubes and then blended into a slushy. Moreover, Li-Jin’s syrup is prepared by caramelizing sugar before boiling it with water, giving it a particularly fragrant flavor.
