Chung Ming Chuan Jia Hot Pot, a local delicacy from Lin Chong Ming Fish Head, is a characteristic snack with a history of 60 years in Chiayi. Every day, pork bone broth is simmered from early morning until the afternoon, with more than 10 hours of careful boiling, transforming the white soup base into a rich, creamy broth resembling soy milk. The fish heads are sourced fresh, featuring plump live grass carp; the thick fish head is removed from the gills, with the body and tail cut into pieces and deep-fried until golden brown, resulting in a crispy exterior and flavorful meat. The rich broth is complemented by carefully selected cabbage, wood ear mushrooms, dried shrimp, tofu, soybean skin, garlic, chili, scallions, pork, and a unique proprietary blend, finished with a special satay sauce. Finally, the crispy fish heads are added, creating a delicious flavor that is rich and slightly spicy but not overwhelmingly so, always leaving diners craving more.
